Peanut Butter Sandwich Cookies

Awhile ago I surprised myself with these amazing peanut butter cookies that I just had to make into a sandwich since that is really the best way to indulge in sweets.


To start

1 cup peanut butter

1 cup butter

1 cup brown sugar

3/4 white sugar

2 eggs

1.5 cup flour

1 cup oatmeal

2 tsp baking soda

pinch of salt


Cream together the sugars, butter, eggs, and peanut butter until well combined and fluffy. Measure out your Flour, Oatmeal and baking soda, add into the wet mixture a little at a time. Do not over mix. Chill the dough for 30 minutes or so. Pre heat the oven at 175 degrees C.

Make sure the cookies are spooned high on the baking sheet before baking for 10-15 minutes.


Make the filling for the "sandwich".


1 Cup Confectionary Sugar

1/3 Cup Peanut Butter - smooth

1/4 tsp Vanilla Extract

Pinch of Salt

Pinch of Milk (depends on texture)


Cream all ingredients together and make sure the mixture is not grainy. Once the cookies have cooled down, you can add a spoon of the filling mixture to the underside of a cookie and add another to the top to create a sandwich cookie.
