Tomato Orzo Goodness

This is a really simple and comforting meal to execute, and literally takes 20 minutes. I will have this on days when I just need a comfy, warm lunch or if I have no energy at the end of the day to make dinner- this is super quick and tasty.


Serves 1-2


250 gr Orzo

1/2 Cup of Veg or chicken broth

1/2 can of tomatoes

Spinach

Pinch of: Thyme, Oregano, paprika, chili flakes, salt and pepper.

Parmesan cheese - a hand full

Chives to garnish


This is kind of a "throw everything together" kind of dishes. Start by cooking your orzo in broth and the can of tomatoes, this usually takes 9-10 minutes. Make sure to mix it throughout as you don't want the orzo to stick to the pot. At the 6-7 minute mark, while there is still liquid in the pot, add in the spinach and all spices. Let that cook down, add more liquid if you feel like its too dry (as long as its not too wet). Turn off the heat, and add the cheese, mix to incorporate it all. Plate it up, add some chopped chives to the top, and Voila!
