Zesty Orange Summer Salad

During the summers, I am on the salad rollercoaster by experimenting with all the summer produce I can find at the local market. It is a thrill and my absolute passion to mix new fruits and vegetables together, cooked or uncooked, cold or warm, fresh or dried, I am a fan. So without further a due, I introduce to you the zesty orange summer salad.


Serves 5 ( This portion was for a party of 8 but there was a lot of food so you can change this according to how many you are).


Salad:

2 Orange

1 Grapefruit

1 Red Orange if you can find it (I couldn't..)

2 Avocado

1/2 Block Feta Cheese

Basil and Parsley (optional)

1/2 cup Pistachios (I like to roast them for 2 minutes before chopping but it is optional)

Pomegranate seeds (optional but yummy)


Dressing: 1/4 cup Juice from the orange

1 -2 tbsp Apple cider vinegar

2 tsp maple syrup or honey

1 tbsp dijon mustard

salt and fresh pepper


First you will deal with the oranges. Cut off the skin (there is a lot of juice when cutting so prepare for that, but save it the best you can). Slice the oranges, into wedges, you don't want them too thin so they fall apart but you also don´t want them too chunky so its a mouth-full. Same thing goes for the avocado, we want them in wedges but not too thick.


When I make salads, I try to cut everything so that you can get a bite full of all the ingredients in one go - the perfect bite if you will. I add the oranges and avocado together, so the avocado doesn't get brown. The feta just needs to be chopped up small or ripped up, I put it aside until im ready for it. The same goes for the pistachios, I toast them on a pan for a few minutes, then chop them into halves, and put them aside to cool.


The dressing is a good excuse to get your arm work out in. I put it all into a small container with a lid, and shake it well, like real well. Once done, I toss the dressing and wedges of fruit together in the cute bowl I have chosen, then get those pomegranate seeds on there, the feta and pistachios on there with the optional herbs. Now it's all done and you can enjoy with your guests.
